Dave Pepin is the founding partner and Chief Brand Officer of Yampa Sandwich Company. Dave’s first deli opened in the Yampa Valley in 1999, but his career in the food industry began over 35 years ago on the outer beaches of Cape Cod, Massachusetts. As a summer dishwasher in coastal seafood establishments, Dave gained exposure to the world of restaurants and an understanding of what makes them work.

After earning a BA in Business Management from Hartwick College in upstate New York, Dave worked at one of Boston’s top restaurant companies, Back Bay Restaurant Group. Dave finished his east coast run as a general manager of one of BBRG’s high-end concept restaurants. Having learned from some of the best in the industry, Dave felt confident he had the skills to set off on his own, and Colorado was the place.

With a love of the outdoors and a passion for the restaurant world, Dave landed in Steamboat Springs to partner up with longtime friend and high school classmate Peter Boniface. What Dave and Pete originally created in a 400 square foot space in downtown Steamboat has grown and flourished for almost 20 years. Dave continues to reside in Steamboat Springs with his wife and two children. Living a conscious and community-oriented life, Dave embraces his alpine surroundings and strives to provide a unique and memorable experience for customers.


Peter Boniface is the Co-Founder and Chief Operations Officer of Yampa Sandwich, LLC as well as co-owner of Backcountry Provisions Inc., BCP Fort Collins Inc., and YSC South Fort Collins Inc. Mr. Boniface opened his first location with co-founder David Pepin in 1999.

In his role as Chief Operations Officer, Mr. Boniface is responsible for menu development, product selection, operations, and training programs.

Mr. Boniface is originally from Sandwich, Massachusetts where he began learning how to cook and blend flavors from his mother. He started cooking professionally and working in the restaurant business in 1983. Prior to founding Yampa Sandwich Co, Mr. Boniface worked in the economics department of Cahners Publishing Co. producing market research reports and then a real estate broker with Marquis Real Estate in Boston, MA.

Mr. Boniface moved to Steamboat Springs, Colorado in 1991 where he worked in various roles in the restaurant and hospitality industry. He saw a need for quality delicatessen in the Steamboat market and in 1999, with David Pepin, opened the first Yampa Sandwich Company, then Backcountry Provisions. Mr. Boniface and Mr. Pepin then expanded to Jackson, Wy in 2005, Fort Collins in 2007 and then Denver in 2010 with David Mischell.

Mr. Boniface lives in Steamboat Springs with his wife Kelly. They have been married 24 years and have two daughters. When not cooking and creating sandwich recipes, you can find Mr. Boniface enjoying the Colorado outdoors skiing powder, mountain biking or hiking with Kelly and her dog Buster.


David Mischell is the Chief Financial Officer of Yampa Sandwich, LLC as well as the owner of Backcountry Denver, LLC, a franchisee of Yampa Sandwich Co. Mr. Mischell opened his first location in Lower Downtown (LoDo) in 2010 and added four more locations within Greater Denver.

In his role as Chief Financial Officer, Mr. Mischell is responsible for accounting, tax, audit coordination, contract negotiations and technology implementations.

Prior to joining Yampa Sandwich Co, Mr. Mischell held various roles in finance and accounting. Specifically, Mr. Mischell was a senior consultant in FTI’s Corporate Finance practice where he helped large companies refinance and restructure debt within the automotive finance, trucking and natural resources segments. Prior to joining FTI, Mr. Mischell was a business analyst in the Global Investment Research and Equity Research group at Goldman Sachs, covering natural gas companies and master limited partnerships. As a member of this four-person team, he helped cover 36 diversified pipeline companies and master limited partnerships across the oil and gas value chain. In this capacity, he was responsible for initiating coverage, building and maintaining proprietary company models, writing research notes, scenario analysis, ratio analysis, database maintenance, coordination with other internal teams, staff supervision and addressing investor questions.

Before that, Mr. Mischell was a senior auditor in the Real Estate practice at Ernst & Young. He was the point person on external audit engagements, ranging from defined-contribution retirement plans and small, privately held firms to large publicly traded companies. His responsibilities included engagement planning and organization, fee negotiations, Sarbanes-Oxley internal control testing, ratio and trend analysis, financial statement audits and reviews and staff supervision.

Mr. Mischell and his wife Alyssa live south of Denver, CO with their three young sons. When not eating sandwiches, you can find Mr. Mischell watching his kids’ sports, golfing, grilling or enjoying the Colorado outdoors with his family.
